    Beet Hummus, Yum!

    If you are looking for a beautiful, healthy, and delicious appetizer to bring to your next party, why not try beet hummus?

    Ingredients:

    1 medium red beet

    1 large clove of garlic, unpeeled

    1 can white beans, rinsed and drained

    Juice of ½ a lemon (about ½ tablespoon)

    ¼ cup Olive Oil

    ½ teaspoon salt

    Directions:

    1. Preheat oven to 400°F.

    2. Wash the beet and place with garlic clove on a sheet of foil. Pull up the sides of the foil and fold to make a packet, leaving room so the air can circulate inside.

    3. Bake for 45 minutes, or until beet is tender when poked with a knife. Set aside to cool.

    4. Put a plastic bag over your hand and gently remove skin from the beet and garlic (the bag will keep your hand clean).

    5. Place all ingredients into a food processor or blender and puree until smooth.

    6. Serve with cut up veggies! Hummus will keep in the fridge for up to 1 week.
